Poor heat exchanger and burner design make for poor performing deep fat
fryers. These poor design elements result in not only high idle energy rates
and low cooking energy effi ciency, but poor cooked food quality as well. Natu-
ral gas Energy Star fryers have cooking energy effi ciencies of more than 50%
and can use less than half the energy of ineffi cient fryers during idle periods
(Figure D222). Quick oil temperature recovery yields superior fi nished food
product and high production capacity. Potential annual operating cost savings
range between $200 and $500 with 18 hr/day operation.
