Savory Meat Gravy

Instant Gravies and Sauces

(about 1 cup)

Use as a delicate gravy for meats and vegetables. Or, for a beautifully smooth and
more richly flavored gravy, pour the cooked mixture into roasting pan with warm

meat drippings from a roast chicken or turkey, or roasts of beef, pork, or lamb, and

stir to blend well.
For a transparent gravy, use cornstarch or potato starch to thicken it.

1 cup richly flavored chicken or meat

(or combination)

All-purpose flour, cornstarch, or potato starch (see amounts below)

1 to 2 tablespoons butter, cut in pea-size pieces

Salt and pepper

Put SauceWhip in pitcher. Add broth and flour, cornstarch, or potato starch. Hold top
of whip and rotate until it moves easily and distributes the ingredients. Cover pitcher

with lid and press start button.
When pitcher is warm (about 1 minute), lift pitcher from base to stop unit, remove lid,

and add pea-size butter pieces. Return pitcher to base, push whip down, cover with

lid, and press start button.
When unit shuts off automatically, remove pitcher from base an

(maximum 2 cups liquid) except butter or oil.

For mixes requiring oil or butter, melt butter first and then pour oil or melted butter

through the Flavor Hatch with unit running. Follow the procedures described in the
Traditional Hollandaise recipe (page 10) or Dijon Mayonnaise

(page 12) for

adding the butter or oil.
