Frying food
WARNING: Never heat oil or shortening without keeping an eye on it. A fire might
start!
To fry, use the proper oil or shortening, for example, vegetable shortening. Add the
shortening in small pieces. Make sure to add enough shortening to the pan. Fill it at
least two fingers worth.
Mixes are not recommended, for example, oil with shortening or different types of
shortening. Hot oil or shortening may foam.
1.
Heat the oil or shortening in a covered pan. When the beep sounds and the
. indicator turns off, this means that the oil or the shortening is hot. Now you can
fry your food, (remove the lid while frying).

Add the first piece and fry.

Remove that piece and fry the next one.
Fry frozen products in small portions. If you do not, the oil or shortening will cool off
too quickly. Example: Frozen french fries: 1-2 qt. (1,5 l.) of oil or shortening per
portion of approximately 0.5 lb. (150 g.) of french fries.
Cooking with
the pressure cooker
Add liquid according the manufacturer's instructions.
Cook vegetables in the 195-215ºF (90-100º C) temperature range. Remove the
foam and cover the pressure cooker. Continue cooking in the 230-250ºF
(110-120º C) temperature range.
