Never heat oil, lard or shortening unattended Ć You can start a
fire!
Only use oil or shortening that is suitable for deepĆfrying, such as vegetable
shortening.
Make certain that there is enough oil or shortening in the pot. Minimum depth 1 ¼"
(3 cm).
Mixtures of various fats, such as oil mixed with shortening, or various types of fats
mixed together, are unsuitable. The hot fat can foam.
1. Heat the shortening or oil with the lid on the pot. When the audible signal sounds,
the shortening or oil is hot enough. You can now begin deepĆfrying your food.
Always deepĆfry with the lid off the pot.
2. Add the first portion of food, and deepĆfry.
3. Remove.
When the dot in the display goes out, the oil or shortening is hot enough for the
next portion. If the dot is still on, do not add the next portion. Wait until the
audible signal sounds and the dot in the display goes out.
4. DeepĆdry the next portion.
DeepĆfry frozen foods in small portions. If you don't, the shortening or oil will cool
too quickly. Example: Frozen french fries: 7 cups (1.5 liter) shortening or oil, about 1
cup (150 g) french fries per portion.
Add liquid to the cooker as instructed by the manufacturer.
Begin the boiling of dried peas and beans at 195Ć215 ºF (90Ć100 ºC). Skim off the
foam and close the pressure cooker. Continue cooking at a temperature of
230Ć250 ºF (110Ć120 ºC).
