Makes about 2½ cups

1. Insert the chopping blade into the work bowl of the

food processor

. Add the parsley, lemon zest, salt and

garlic and process to chop, about 10 seconds. Scrape

down the sides of the bowl and repeat. Add r

emain-

ing ingredients and pr

ocess until smooth, about 5

minutes, stopping to scrape down the sides of the

bowl as needed.

2. For serving, transfer hummus to a shallow bowl. Make

a slight indentation in the center of the dip and fi ll

with the remaining tablespoon of oil. Sprinkle the

paprika and za’atar, if using, over the oil.
