Chocolate Dessert Waffles

1/4 cup (60 ml) vegetable

shortening

1/2 cup (125 ml) sugar
1 egg
1/2 teaspoon (2.5 ml) vanilla
2/3 cup (160 ml) flour
3 tablespoons (45 ml)

unsweetened baking cocoa

In a small mixing bowl, cream shortening and sugar until well
blended. Add egg and vanilla; blend until smooth. Add remaining
ingredients and mix until well blended.

Batter will be thicker than

normal waffle batter.

Spray grids with nonstick cooking spray. Pour

batter onto waffle maker. Remove and serve topped with vanilla
ice cream. Makes 2 cups (500 ml) batter.

Cinnamon-Raisin Waffles

1 cup (250 ml) flour
2 tablespoons (30 ml) brown

sugar, packed

2 teaspoons (10 ml) baking

In a small bowl, whisk together the flour, sugar, baking powder,
salt, and cinnamon. In a large bowl, whisk together the egg, milk,
and oil. Add the flour mixture to the milk mixture. Stir until the
batter is just combined. Stir in the raisins. Pour batter onto the
waffle maker. Makes 2 cups (500 ml) batter.

Whole Grain Waffles

1/2 cup (125 ml) flour
1/2 cup (125 ml) whole wheat flour
1/2 cup (125 ml) quick-cooking

rolled oats

2 teaspoons (10 ml) baking

powder

In a large bowl, mix together the flour, whole wheat flour, rolled oats,
and baking powder. Set aside. In a small bowl, whisk together the
milk, oil, and egg. Pour the egg mixture into the dry ingredients and
stir until just combined. Pour batter onto waffle maker. Makes 3
cups (750 ml) batter.
