ATTenTiOn: The cup bottom and the vessel can be very hot because of the hot water.
wARninG: Do not remove the steam and hot water wand from the cup, as long as hot

water is still leaking. Hot water may splash out of the cup. Turn the selector switch always

first to center into the standby position before removing the cup from the steam and hot

water wand. Only thereby the water generation is terminated immediately.

Preparing a good coffee is an art that is easily learned. In this chapter you will find some

tips for your perfect coffee.
note:

To enjoy a truly aromatic espresso, you should extract not more than 30 ml (with the

single filter) or - for a double espresso - not more than 60 ml.
note:

Choose your coffee according to your own preferences. Here the type of coffee

plays a major role and the way in which the coffee is ground (fine or coarse). You can also

influence the flavor by tamping the coffee. Experiment to find your personal touch.

The Coffee

Keep the coffee (powder, whole beans or espresso pads) in an airtight container in a cool,

dry place. However you should not place coffee in the fridge or the freezer.
You can use ready ground coffee. In this case, you should consume the coffee powder in

the course of a week, since the flavor dissipates with time.
We recommend buying whole coffee beans and grinding just before extraction. Coffee

beans should be stored not longer than 1 month.

The water

When brewing coffee, you should make sure that the water is pressed with the right speed

through the powder.
• If the water flows too slowly, the coffee is very dark and bitter. The crema on the coffee

is stained.
• If the water flows too fast, then a large part of the flavoring substances remains in the

coffee powder and the coffee is watery, bland and without crema.
You can control the water flow, by pressing the coffee powder when filling more or less

firmly. You may be able to grind the coffee too coarse or fine.

If you are using ready ground coffee, then make sure that the ground coffee is suitable for

espresso/cappuccino machines. If you grind the coffee, then the powder should not be too

coarse and not too fine. This will affect the speed with which the water is forced through

the powder and ultimately determine the quality of your coffee.
• If the coffee is ground too fine (the coffee is like icing sugar and feels like flour between

your fingers) then the water can not flow through the powder under pressure. The coffee is

characterized dark and bitter and the crema is stained.
• If the coffee is ground too coarse, the water flows through too quickly and the flavors

remain in the coffee powder. The coffee is watery and bland.
