4 .3 Principle of hydrolysis
The sample is boiled in diluted hydrochloric acid to break down
proteins and high-molecular carbohydrates into acid-soluble con-
stituents.

Afterwards the sample is filtered over a prepared glass sample tube
and dried. The celite distributes the hydrolysate evenly in the tube,
prevents clumping and facilitates the extraction to be carried out.
The fat can now be extracted with an appropriate solvent.
