Christmas Shortbread

125g butter or margarine

cup glazed ginger, freshly chopped

Melted chocolate

Freshly chopped nuts and red glazed cherries

1.Preheat oven to 190°C. Grease and line a

20cm round sandwich tin.

2.In the small Mixmaster bowl, cream the

butter or margarine and sugar on Medium
speed (4-6), until light and fluffy.

3.Add flour, baking powder and ginger and

mix on Low speed (1) until the mixture is
crumby.

4.Press into prepared cake tin, fork and

pinch sides and bake for 15-20 minutes.

5.Once cooled, drizzle the melted chocolate

over the shortbread and top with freshly
chopped nuts and red glazed cherries.
