It is possible to change between high and low fan speed at any point in the cooking process
(does not apply to PROVING).
Note that the 2/3 models with one phase have only one fan speed.
(24) Main switch
Switch the steamer on and off by pressing key (24). Before the steamer starts, all functions are
automatically tested, and, consequently, all displays and control lamps light up for approx. 2
seconds.
The steamer always starts in the manual and HOT AIR modes.
(25)Manual humidity pulsing
By activating key (25), humidity/steam is added to the oven chamber. The humidity pulsing
continues as long as the key is activated.
Manual humidity pulsing is used to add steam to the oven chamber at the beginning of a
program. Humidity pulsing can be used in all operating modes.
When baking, for instance, dough products in the HOT AIR mode, we recommend that you add
humidity during the first 10 or 15 seconds of the baking process to ensure that the products
have a crisp and golden surface.
When roasting, manual steam injection is a very efficient way of closing the pores of the meat
thus ensuring that the meat retains its moisture and stays juicy.
Changing the humidity pulsing through the nozzle
In the operating modes combi steaming (13), (14), (15), regenerating (16) and proving (17), it
is possible to change the interval between the pulses.
Regenerating
Press the regenerating key (16) for 5 seconds.
A figure appears in the time display. Set the desired pulsing interval (between 3 and 50
seconds) and conclude with ENTER (19).
Combi steaming
Press the combi-steam key (13), (14), (15) for 5 seconds.
This mode has 3 steps at which the pulsing can be changed:
Combi 1:
12 - 50 sec.
Combi 2:
5 - 11 sec.
Combi 3:
1 - 10 sec.
You change between the steps by pressing the combi-steam key (13), (14) or (15).
Set the desired value(s) with the arrow key (4,11) and conclude with ENTER (19).
