King Kooker® Quesadillas
optional garnishes:
Lettuce
Sour Cream
Guacamole
More diced tomatoes
directions:
Place a few tablespoons of olive oil on the tortilla pan (comal) and place it on your cooker to heat the
tortillas. Light the cooker. Place a tortilla in the hot oil and flip it over a few times. When the tortilla
begins to heat and air bubbles begin to form, sprinkle cheese over the top of the tortilla. Sprinkle the
other ingredients of your choice in thin layers over the cheese on the tortilla. Make sure to sprinkle the
fillings only over the shell, and not onto the pan. When the cheese is melted, and the other ingredients
are adequately warmed, lift one side of the tortilla and fold it over the other side. Remove the folded
quesadilla from the pan with the spatula and place on the serving plate. Slice into wedges, garnish and
serve. Continue to cook each tortilla individually to make a variety of quesadilla combinations. A little olive
oil should be added to the tortilla pan before each tortilla is cooked.
King Kooker® Fried bananas
Use your outdoor cooker and rice cooker/fry pan to wow your guests with these delicious banana treats!
directions:
In a mixing bowl, mix a batch of your favorite pancake mix according to its directions. Slice the bananas
lengthwise and in half to make four pieces from each banana. Pour enough oil into the fry pan so that it is
about one inch (2.5 cm) deep. Light your cooker and place the pan over a low fire with the thermometer on
the side of the pot and down into the oil. Heat the oil to 325
°
F (163
°
C). Dip a banana slice into the batter.
When the slice is coated with batter, using the skimmer and protective mitts, carefully place it into the hot
oil and fry until the batter is cooked, turning each piece over to make sure both sides are evenly cooked.
Several slices can be cooked at once. When cooked on both sides, remove from the oil, and place on a
plate to cool. Sprinkle the cooked fried bananas with cinnamon and powdered sugar as desired. These
are simple and scrumptious!
