Use lean, coarse ground beef, venison or turkey.
. Mix all the ingredients very well with the ground meat
. Cover and put into refrigeration for 6 hours or up to over night
. Form the jerky strips with the Jerky Gun as directed
. Follow “Cooking Instructions”
DAKOTA JERKY
5 lbs (2.3 kg) ground meat
3 Tbsp (45 ml) kosher salt
1 Tbsp (15 ml) liquid smoke
1 Tbsp (15 ml) fine ground black pepper
1 Tbsp (15 ml) onion powder
2 tsp (10 ml) granulated garlic
1 Tbsp (15 ml) dried red pepper flakes
1 level tsp (5 ml) Prague powder #1
STANDARD JERKY
5 lbs (2.3 kg) ground meat
2 Tbsp (30 ml) salt
1 tsp (5 ml) curing salt
1 Tbsp (15 ml) garlic powder
1 Tbsp (15 ml) onion powder
2 tsp (10 ml) cayenne pepper
2 tsp (10 ml) black pepper
2 tsp (10 ml) curry powder
1/2 cup (125 ml) soy protein concentrate, or non-fat dry milk
Optional-Sprinkle top of pre-cooked jerky with coarse black pepper
TERIYAKI JERKY
5 lbs (2.3 kg) ground meat
1 cup (250 ml) Worcestershire sauce
2 cups (500 ml) soy sauce
1 tsp (5 ml) black pepper
2 tsp (10 ml) garlic powder
2 tsp (10 ml) onion powder
PEPPERED JERKY
5 lbs (2.3 kg) ground meat
1 tsp (5 ml) curing salt
2 Tbsp (30 ml) table salt
2 Tbsp (30 ml) white pepper
2 Tbsp (30 ml) freshly grind black pepper
2 tsp (10 ml) ground coriander
1/2 cup (125 ml) non-fat dry milk powder
2 tsp (10 ml) liquid hickory smoke
2 cups (500 ml) cold water
HOT & SPICY JERKY

1 tsp (5 ml) curing salt
2 Tbsp (30 ml) salt
2 tsp (10 ml) crushed red chili peppers
2 tsp (10 ml) cayenne pepper
2 tsp (10 ml) chili powder

HONEY & BROWN SUGAR JERKY
