smoked ham, cut into 1-inch pieces
dove gallic, minced
shallot, minced

Preheat
ovot
to 400°F.
Using an electric meat grinder, pass frre veal, chicken
or turkey, bacon and ham ttirough the machine out into
a bowl. Add №e gartic, shallot saK,
pepper,
egg,
dnnamon and cognac. Mix together wth hands and
pass mirdune ttirough ttie grinder once more.
Transfer mixture to a 2-сгф capadty terrine mold or
loaf pan, packing if firmly and spreading ft evenly and
anoothly wffli a nrbber spatula. Press the bay leaf into
the top of the tenfrie and bake, unaweted, until the
pate has pulled away frcmn the stdes of the dish and
the top is nicely browned, about 45 minutes.
Remove from the oven, let cwol, cover and refrigerate
tori day to altovf the flavors to develop. Cut into slices
to serve.
A blend of freshly ground meats create tender and
llavorful meat loal
1 lb.
fresh beef chuck
1/2 lb. pork shoulder or butt
1 /2 lb.
veal shoulder
or leg
1 Tbs.
olive oil

yellow onion,
chopped

celery stalks,
finely diced

garlic dove, minced

slices white bread

cup milk

oz. tomato sauce

egg, lightly beaten
Salt and freshly ground pepper, to taste

ketchup
Cut the beef, pork and veal into 1 -inch chunks. Using
an electiic meat grinder, process ttie beef, pork and
veal according to the manufacturer’s instructions.
Keep chilled unttl ready to use.
Pr^ieal oven to aso’F.
In a sWIlet over medium-high heat, warm oil. Add
onion, ceiety and garfic, sauté, stim'ng, until tender,
6—8 minutes and set aside. Tear bread slices into
small pieces and in the bowl of a food processor,
pulvetize the bread pieces into crambs. In a large
mixing bowl, combine bread slices and miik, slir to
blend and let at, 2-3 minutes. Add vegetable mixture
and stir to blend. Add ground beef, pork and veal,
tomato sauce, egg, scJt and pepper and fold genfly
unfit ttendecL Transfer mixture to a 2-3 lb. loaf pan
and using your
hEoids
^ape the mixture into an
oblong loaf. Spread ketchup over top and bake until
fully cooked, about 1 hour and 30 minutes.
Note:
Some ingredients will remain inside the grinder
and the attachmwits.
Remove them after use.
Be sure to switdi off and unplug.
