CHEWY LEMON/LIME MINI
CUPCAKES
To create a crunchy outside, spray cooking plates liberally
and prepare without cupcake liners.

3/4 cup unbleached, pre-sifted flour
1/2 cup sugar
1 (1 oz.) package Jello ® Instant Sugar Free Fat Free
Lemon Pudding Mix
1 teaspoon baking powder
3 tablespoons honey
2 tablespoons orange juice
3 tablespoons vegetable oil
1 small lime, juiced and zested (3 tablespoons lime juice)

Combine and mix all ingredients in a medium bowl.
Fill each of the cupcake molds on the lower cooking plate
with 1 heaping teaspoon of batter.
Cook 10-15 minutes or until done.
Makes 14 to 18 mini cupcakes.
