Inspiration
Poach whole pears in white wine, sugar, orange zest, water and a vanilla bean.
When tender serve with whipped cream and caramel sauce.
SIMMERMAT
The Simmermat helps you control the temperature of your cooking surface to ensure
the long slow simmering that is needed for successfully cooking delicate foods. Use
at low heat only.
1. Before use, wipe the protective oil from the Simmermat.
2. The Simmermat will change colour when exposed to heat. This is normal.
3. Always remember it is a simmering utensil and exposure to extreme heat may
distort it.
4. Periodically rub cooking oil into the Simmermat with a paper towel to prevent
rust. Two drops are all that is necessary.
To use, first cook the food, or bring to a boil, over high heat. Then reduce the heat
and carefully place the Simmermat over the flame with the points facing upward. Put
your saucepan on top of the points and simmer on the LO setting.
WARNING
Always turn the burner off before moving the Simmermat and
handle the hot Simmermat with tongs and/or pot holders
to prevent burns.
